Waicoco is an acclaimed beachfront restaurant situated in the Westin Maui, a resort that offers an enticing blend of comfort and luxury. This oasis, nestled amidst the resort’s numerous amenities, provides sweeping oceanfront views of two Hawaiian islands, Molokai and Lanai.
The restaurant itself stands out as a dining destination. Steps from Ka’anapali Beach, it offers an idyllic setting for watching the sunset, particularly for guests lucky enough to snag an outdoor table.
Waicoco’s menu is a testament to the talent of the chefs and their close relationships with local farmers and fishermen. It offers a delightful culinary journey that starts with the “Permanent Vacation” cocktail – a smoky and heady blend of mezcal and Maraschino liqueur with a subtle bitter edge from Amaro.
The appetizing Warm Hawaiian rolls are an absolute must-try. These golden, buttery, fragrantly sweet rolls are served with whipped butter flecked with Aleppo pepper. The Waicoco Crudo features hamachi served with a citrusy, creamy sauce, presenting a perfect balance of flavors.
For the main course, the Crispy Adobo Pork Belly, marinated for 18 hours, offers a delightful crunch on top and juicy lusciousness within. Another standout is the seared ahi, a massive slab of fish that offers a rich, meaty texture akin to a steak, dusted in “volcano spice” and served with tahini buerre blanc and salsa verde.
The Kimchi Fried Rice with Crispy Kaarage Chicken is a hearty dish featuring sweet-spicy fried rice and boneless chicken, while the Salmon Belly Bake is an Asian comfort food dish featuring succulent salmon baked with ginger rice and sweet-and-sour vegetables.
Finally, guests can cap off their meal with the warm mango bread for dessert, a fluffy and moist delight served a la mode with Lappert’s vanilla ice cream.
Happy Hour at Waicoco is from 3pm-5pm daily and features discounted appetizers, cocktails, beer, and wine.

“We decided to enjoy an evening sunset and dinner. We decided on the Waicoco restaurant in the Westin. The staff accommodated us promptly and situated us with an amazing table with a view of the sunset. Our server Carly couldn’t not have been more pleasant.
She was attentive and informative about the various dishes. She brought our drinks and hot rolls that were delicious, Carly had a great energy grounded in being genuine. Our meal soon arrived and both main course dishes were delicious.
The Scottish salmon and ribs along with a side of kimchee rice. The whole experience was very pleasing after a long week and Carly’s attentive charming personality topped our experience at Waicoco. Well done to the staff and the Aloha is appreciated. Mahalo.”
